Lindt Chocolate Mousse

Ingredients
- 3 bars (100 g each) Lindt EXCELLENCE 70% Dark Chocolate, chopped
- 1 tbsp (15 mL) butter
- 2 tbsp (30 mL) hot water
- 1 tbsp (15 mL) orange liqueur (optional)
- 2 cups (500 mL) 35% whipping cream
- 4 egg yolks
- 1/4 cup (60 mL) granulated sugar
- Mint leaves

Method
Step 1.
In double boiler over medium-low heat, combine chocolate and butter, stirring until chocolate has melted and mixture is smooth. Stir in hot water and orange liqueur (if using). Set aside.
Step 2.
Whip cream just until stiff peaks form. Set aside.
Step 3.
In large bowl, beat egg yolks and sugar until pale and thickened. Add chocolate mixture, stirring just until combined. Using a spatula, fold in whipped cream.
Step 4.
Transfer to serving bowl or divide into individual cups. Cover mixture with plastic wrap; refrigerate for 6 hours or overnight. Before serving, garnish with more whipped cream, shaved chocolate and, if desired, mint leaves.
