Ingredients
- 150g Lindt EXCELLENCE 70% Cocoa
- 75g butter, use good quality for a delicious flavour
- 1 egg
- 1 egg yolk
- 35g raw caster sugar
- pinch of fleur de sel
- optional: tonka bean

Method
Step 1.
Line the loaf tin with baking paper and preheat the oven to 190°C.
Step 2.
Gently melt together the chocolate and the butter.
Step 3.
Set aside.
Step 4.
In a large bowl, combine the egg, egg yolk, sugar, salt, and tonka if using.
Step 5.
Whisk the egg and sugar mixture until light and at least double in volume.
Step 6.
Gently fold the chocolate mixture into the egg-sugar mixture until well combined.
Step 7.
The mixture should remain as light as possible.
Step 8.
Place mixture into the prepared tin, smooth the surface and place in the oven.
Step 9.
Bake for 10 minutes.
Step 10.
The edges should start to firm, with the centre remaining soft.
Step 11.
Allow to cool slightly.
Step 12.
Cut portions with a clean straight-edged knife.
Step 13.
Serve with dukkah, a dollop of crème fraîche and citrus oil. Enhance your tasting experience with a pairing of EXCELLENCE and red wine.
