What is tempering?

Tempering involves heating, cooling and then reheating chocolate to avoid uncontrolled crystallization and achieve a stable formation of cocoa butter, which is the fat in chocolate. It's this process that gives Lindt products their glossy chocolate finish and the chocolate bars their crisp snap.
